Description

Loaded Potato Skins are a delicious appetizer made from crispy potato halves filled with cheese, bacon, and green onions.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake the potatoes for 45-60 minutes until tender.
  5. Let the potatoes cool slightly, then cut them in half and scoop out some of the flesh.
  6. Fill each potato skin with cheese, bacon, and green onions.
  7. Return the filled potato skins to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  8. Serve with sour cream on the side.

Notes

  • For a vegetarian option, omit the bacon.
  • Feel free to add other toppings like jalapeños or avocado.
  • These can be made ahead of time and reheated before serving.
