Ingredients

  • 1 cup almond flour
  • 1/2 cup protein powder (vanilla or lemon flavored)
  • 1/4 cup honey or maple syrup
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut (optional)


Instructions

  1. In a mixing bowl, combine almond flour, protein powder, and salt.
  2. Add honey or maple syrup, lemon juice, and lemon zest to the dry ingredients.
  3. Mix until a dough forms. If the mixture is too dry, add a little water.
  4. Fold in shredded coconut if using.
  5. Roll the mixture into small balls, about 1 inch in diameter.
  6. Place the bites on a baking sheet lined with parchment paper.
  7. Refrigerate for at least 30 minutes to firm up.
  8. Store in an airtight container in the fridge for up to a week.
