Ingredients
- 1 cup almond flour
- 1/2 cup protein powder (vanilla or lemon flavored)
- 1/4 cup honey or maple syrup
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- 1/4 cup shredded coconut (optional)
Instructions
- In a mixing bowl, combine almond flour, protein powder, and salt.
- Add honey or maple syrup, lemon juice, and lemon zest to the dry ingredients.
- Mix until a dough forms. If the mixture is too dry, add a little water.
- Fold in shredded coconut if using.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge for up to a week.
