Ingredients
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour and powdered sugar, then cut in the butter until crumbly.
- Press the mixture into the bottom of a greased 8×8 inch baking dish.
- Bake for 15 minutes or until lightly golden.
- In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt.
- Pour the lemon mixture over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Allow to cool before slicing into bars and dusting with powdered sugar.
Notes
- For a stronger lemon flavor, add more lemon zest.
- These bars can be stored in the refrigerator for up to a week.
