Lasagna Soup is a comforting and creamy dish that combines the flavors of traditional lasagna in a hearty soup form.
Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 8 oz lasagna noodles, broken into pieces
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and minced garlic, cooking until softened.
- Stir in crushed tomatoes, broth, broken lasagna noodles, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 20 minutes, or until noodles are tender.
- In a separate bowl, mix ricotta cheese with a pinch of salt and pepper.
- Serve the soup in bowls, adding a dollop of ricotta cheese on top, and sprinkle with mozzarella and Parmesan cheese.

- Feel free to add vegetables like spinach or zucchini for extra nutrition.
