Ingredients
- 4 large flour tortillas
- 1 cup shredded mozzarella cheese
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup cooked spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- Olive oil for brushing
Instructions
- Preheat a skillet over medium heat.
- In a bowl, mix together the mozzarella, ricotta, Parmesan, spinach, sun-dried tomatoes, and Italian seasoning.
- Place one tortilla in the skillet and spread a portion of the cheese mixture on one half of the tortilla.
- Fold the tortilla over to cover the filling and cook until golden brown, about 3-4 minutes on each side.
- Repeat with the remaining tortillas and filling.
- Slice into wedges and serve warm.
