Description

Italian Quesadillas are a delightful fusion of Italian flavors and the classic quesadilla, perfect for a unique taco night.


Ingredients

  • 4 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup cooked spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • Olive oil for brushing


Instructions

  1. Preheat a skillet over medium heat.
  2. In a bowl, mix together the mozzarella, ricotta, Parmesan, spinach, sun-dried tomatoes, and Italian seasoning.
  3. Place one tortilla in the skillet and spread a portion of the cheese mixture on one half of the tortilla.
  4. Fold the tortilla over to cover the filling and cook until golden brown, about 3-4 minutes on each side.
  5. Repeat with the remaining tortillas and filling.
  6. Slice into wedges and serve warm.

Notes

  • Feel free to add other ingredients like grilled chicken or mushrooms for extra flavor.
