A quick and easy recipe for making delicious chicken tacos using an Instant Pot.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 packet taco seasoning
- 1 cup salsa
- 8 small tortillas
- 1 cup shredded cheese
- 1 cup lettuce, shredded
- 1/2 cup sour cream
- 1/2 cup diced tomatoes
Instructions
- Place the chicken breasts in the Instant Pot.
- Add the chicken broth, taco seasoning, and salsa.
- Seal the lid and cook on high pressure for 15 minutes.
- Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
- Shred the chicken with two forks and mix it with the sauce in the pot.
- Warm the tortillas in a skillet or microwave.
- Assemble the tacos by placing the chicken mixture on the tortillas and topping with cheese, lettuce, sour cream, and tomatoes.
Notes
- For a spicier kick, add jalapeños to the tacos.
- Can substitute chicken with beef or pork if desired.
- Leftover chicken can be stored in the refrigerator for up to 3 days.
