Description

A quick and easy recipe for making delicious chicken tacos using an Instant Pot.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 1 cup salsa
  • 8 small tortillas
  • 1 cup shredded cheese
  • 1 cup lettuce, shredded
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes


Instructions

  1. Place the chicken breasts in the Instant Pot.
  2. Add the chicken broth, taco seasoning, and salsa.
  3. Seal the lid and cook on high pressure for 15 minutes.
  4. Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  5. Shred the chicken with two forks and mix it with the sauce in the pot.
  6. Warm the tortillas in a skillet or microwave.
  7. Assemble the tacos by placing the chicken mixture on the tortillas and topping with cheese, lettuce, sour cream, and tomatoes.

Notes

  • For a spicier kick, add jalapeños to the tacos.
  • Can substitute chicken with beef or pork if desired.
  • Leftover chicken can be stored in the refrigerator for up to 3 days.
