Ingredients

  • 2 cups of cooked rice
  • 1 cup of bell peppers, diced
  • 1 cup of corn, drained
  • 1 cup of black beans, rinsed
  • 1 cup of shredded cheese
  • 1/2 cup of salsa
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked rice, bell peppers, corn, black beans, cheese, salsa, chili powder, cumin, salt, and pepper.
  3. Mix well until all ingredients are evenly incorporated.
  4. Transfer the mixture into a greased bundt pan, pressing down firmly.
  5. Bake in the preheated oven for 25-30 minutes, or until heated through.
  6. Let it cool for a few minutes before inverting onto a serving platter.
