Ingredients
- 4 boneless, skinless chicken breasts
- 8 ounces brie cheese, cut into slices
- 1 cup fresh cranberries
- 1/4 cup brown sugar
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a small saucepan, combine cranberries and brown sugar over medium heat until the cranberries burst and the mixture thickens.
- Cut a pocket in each chicken breast and stuff with slices of brie cheese and the cranberry mixture.
- Season the outside of the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
- Let the chicken rest for a few minutes before serving. Garnish with fresh thyme if desired.
Notes
- For a sweeter flavor, add more brown sugar to the cranberry mixture.
- Serve with a side of roasted vegetables or a salad for a complete meal.
- This dish can be prepared ahead of time and baked just before serving.
