Ingredients

  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine honey, balsamic vinegar, olive oil, salt, and pepper.
  3. Add the carrot sticks to the bowl and toss until they are well coated.
  4. Spread the carrots in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
  6. Remove from the oven and garnish with fresh parsley if desired before serving.
