Description

A traditional holiday fruitcake packed with nuts and dried fruits, perfect for festive celebrations.


Ingredients

  • 2 cups mixed dried fruits
  • 1 cup chopped nuts (walnuts, pecans, or almonds)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 3 large eggs
  • 1/4 cup orange juice
  • 1/4 cup brandy or rum (optional)


Instructions

  1. Preheat the oven to 325°F (160°C) and grease a loaf pan.
  2. In a bowl, mix the dried fruits and nuts with 1 tablespoon of flour to prevent them from sinking.
  3. In another bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  4. In a large mixing bowl, cream the butter and brown sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the orange juice and brandy (if using).
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Fold in the fruit and nut mixture.
  9. Pour the batter into the prepared loaf pan and smooth the top.
  10. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  11. Let the fruitcake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Fruitcake can be stored for several weeks in an airtight container.
  • For added flavor, consider soaking the dried fruits in brandy overnight before baking.
  • This cake can be served plain or with a dusting of powdered sugar on top.
