Description

A delicious and nutritious high protein broccoli cheddar soup that is perfect for a comforting meal.


Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  2. Add broccoli florets and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  3. Stir in the shredded chicken and milk, and cook for an additional 5 minutes.
  4. Remove from heat and blend the soup until smooth, or leave it chunky if preferred.
  5. Stir in the shredded cheddar cheese until melted and well combined.
  6. Season with salt and pepper to taste, and serve hot.

Notes

  • For a vegetarian version, omit the chicken and use vegetable broth.
  • Feel free to add other vegetables like carrots or cauliflower for extra nutrition.
  • This soup can be stored in the refrigerator for up to 3 days.
