Ingredients
- 1 lb flank steak
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Season the flank steak with salt, pepper, and dried oregano.
- Grill the steak for about 5-7 minutes on each side, or until desired doneness.
- Remove the steak from the grill and let it rest for 5 minutes before slicing.
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil and lemon juice, then pour over the quinoa mixture.
- Toss to combine and season with additional salt and pepper if needed.
- Serve the sliced steak over the quinoa salad and enjoy!
