Healthy Spanish garlic soup, Sopa de Ajo, boosts immunity!

Description

A nutritious and flavorful Spanish garlic soup, known as Sopa de Ajo, that is packed with immune-boosting ingredients.


Ingredients

  • 6 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of diced tomatoes
  • 1 teaspoon of smoked paprika
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 cup of stale bread, cubed
  • 2 large eggs (optional)
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Stir in the diced tomatoes and smoked paprika, cooking for another 2-3 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the cubed stale bread and let it simmer for 10 minutes.
  6. If using, crack the eggs into the soup and let them poach for about 3-4 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes

  • This soup can be made vegan by omitting the eggs.
  • For a spicier version, add a pinch of cayenne pepper.
  • Stale bread is preferred for better texture, but fresh bread can be used if necessary.
