Description
A nutritious and flavorful Spanish garlic soup, known as Sopa de Ajo, that is packed with immune-boosting ingredients.
Ingredients
- 6 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 cup of diced tomatoes
- 1 teaspoon of smoked paprika
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 cup of stale bread, cubed
- 2 large eggs (optional)
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Stir in the diced tomatoes and smoked paprika, cooking for another 2-3 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the cubed stale bread and let it simmer for 10 minutes.
- If using, crack the eggs into the soup and let them poach for about 3-4 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- This soup can be made vegan by omitting the eggs.
- For a spicier version, add a pinch of cayenne pepper.
- Stale bread is preferred for better texture, but fresh bread can be used if necessary.
