Description

A creamy and flavorful twist on traditional mashed potatoes, enhanced with roasted garlic and mascarpone for a healthy yet indulgent side dish.


Ingredients

  • 2 pounds of potatoes
  • 1 head of garlic
  • 1/2 cup mascarpone cheese
  • 1/4 cup low-fat milk
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the head of garlic in aluminum foil and roast in the oven for about 30-35 minutes until soft.
  3. Peel and chop the potatoes, then boil them in salted water until tender.
  4. Drain the potatoes and return them to the pot.
  5. Squeeze the roasted garlic cloves into the potatoes.
  6. Add mascarpone cheese, low-fat milk, and olive oil to the potatoes.
  7. Mash the mixture until smooth and creamy.
  8. Season with salt and pepper to taste.
  9. Serve warm and enjoy!

Notes

  • For a vegan version, substitute mascarpone with a plant-based cream cheese.
  • Adjust the amount of garlic based on your preference for a stronger or milder flavor.
