Ingredients
- 2 pounds of potatoes
- 1 head of garlic
- 1/2 cup mascarpone cheese
- 1/4 cup low-fat milk
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the head of garlic in aluminum foil and roast in the oven for about 30-35 minutes until soft.
- Peel and chop the potatoes, then boil them in salted water until tender.
- Drain the potatoes and return them to the pot.
- Squeeze the roasted garlic cloves into the potatoes.
- Add mascarpone cheese, low-fat milk, and olive oil to the potatoes.
- Mash the mixture until smooth and creamy.
- Season with salt and pepper to taste.
- Serve warm and enjoy!
