  • 2 cups fresh or frozen corn kernels
  • 1 cup low-fat milk
  • 1/2 cup Greek yogurt
  • 1/4 cup whole wheat flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the corn, milk, Greek yogurt, and eggs.
  3. In another bowl, whisk together the flour, baking powder, salt, pepper, garlic powder, and onion powder.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  5. Pour the mixture into a greased baking dish and sprinkle the Parmesan cheese on top.
  6. Bake for 30-35 minutes, or until the casserole is set and golden brown on top.
  7. Let it cool for a few minutes before serving.
