Ingredients
- 2 cups fresh or frozen corn kernels
- 1 cup low-fat milk
- 1/2 cup Greek yogurt
- 1/4 cup whole wheat flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the corn, milk, Greek yogurt, and eggs.
- In another bowl, whisk together the flour, baking powder, salt, pepper, garlic powder, and onion powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Pour the mixture into a greased baking dish and sprinkle the Parmesan cheese on top.
- Bake for 30-35 minutes, or until the casserole is set and golden brown on top.
- Let it cool for a few minutes before serving.
