Ingredients
- 1 lb chicken breast, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup tzatziki sauce
- Fresh parsley for garnish
Instructions
- In a bowl, combine diced chicken, olive oil, garlic powder, onion powder, oregano, salt, and pepper. Mix well to coat the chicken.
- Heat a skillet over medium heat and cook the chicken for 6-8 minutes, or until fully cooked and golden brown.
- In serving bowls, layer cooked quinoa, followed by the cooked chicken.
- Add cherry tomatoes, cucumber, and red onion on top of the chicken.
- Drizzle tzatziki sauce over the bowls and garnish with fresh parsley.
