Ingredients
- 1 cup rolled oats
- 1/2 cup sunflower seed butter
- 1/4 cup honey or maple syrup
- 1/2 cup mini chocolate chips (dairy-free if needed)
- 1/4 cup dried fruit (raisins or cranberries)
- 1/4 cup pumpkin seeds
- 1 tsp vanilla extract
Instructions
- In a large bowl, mix together the rolled oats, sunflower seed butter, and honey or maple syrup until well combined.
- Add in the mini chocolate chips, dried fruit, pumpkin seeds, and vanilla extract. Stir until evenly distributed.
- Line a baking dish with parchment paper and press the mixture firmly into the dish.
- Refrigerate for at least 1 hour to set.
- Once set, cut into bars or squares and serve.
