Ingredients

  • 1 cup rolled oats
  • 1/2 cup sunflower seed butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup mini chocolate chips (dairy-free if needed)
  • 1/4 cup dried fruit (raisins or cranberries)
  • 1/4 cup pumpkin seeds
  • 1 tsp vanilla extract


Instructions

  1. In a large bowl, mix together the rolled oats, sunflower seed butter, and honey or maple syrup until well combined.
  2. Add in the mini chocolate chips, dried fruit, pumpkin seeds, and vanilla extract. Stir until evenly distributed.
  3. Line a baking dish with parchment paper and press the mixture firmly into the dish.
  4. Refrigerate for at least 1 hour to set.
  5. Once set, cut into bars or squares and serve.
