Ingredients
- 4 bell peppers (orange, green, yellow, or red)
- 1 cup cooked rice
- 1 can black beans, drained and rinsed

- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix the cooked rice, black beans, corn, cumin, chili powder, half of the cheese, salt, and pepper.
- Stuff the mixture into the bell peppers.
