Description

Halloween Stuffed Peppers are a fun and spooky dish perfect for Halloween celebrations. These colorful bell peppers are filled with a delicious mixture of rice, beans, and spices, making them a tasty and festive treat.


Ingredients

  • 4 bell peppers (orange, green, yellow, or red)
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Olive oil for drizzling


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the cooked rice, black beans, corn, cumin, chili powder, half of the cheese, salt, and pepper.
  4. Stuff the mixture into the bell peppers.
  5. Place the stuffed peppers in a baking dish and drizzle with olive oil.
  6. Bake for 25-30 minutes until the peppers are tender.
  7. Sprinkle the remaining cheese on top and bake for an additional 5 minutes until melted.
  8. Serve warm and enjoy your spooky treat!
