Description

A festive and healthy Halloween salad featuring rice and a variety of colorful vegetables, perfect for celebrating the spooky season.


Ingredients

  • 1 cup cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • 1/2 cup black olives, sliced
  • 1/4 cup corn
  • 1/4 cup green onions, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon vinegar
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the cooked rice, cherry tomatoes, cucumber, bell peppers, black olives, corn, and green onions.
  2. In a small bowl, whisk together the olive oil, vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. If desired, sprinkle feta cheese on top before serving.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Notes

  • Feel free to add or substitute any of your favorite vegetables.
  • This salad can be made a day in advance for convenience.
