Ingredients

  • 8 oz mushroom-shaped pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup black olives, sliced
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Cook the mushroom-shaped pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, black olives, bell peppers, red onion, and feta cheese.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
