Ingredients
- 8 oz mushroom-shaped pasta
- 1 cup cherry tomatoes, halved
- 1 cup black olives, sliced
- 1 cup bell peppers, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook the mushroom-shaped pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked pasta, cherry tomatoes, black olives, bell peppers, red onion, and feta cheese.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
