Delicious and spooky blueberry hand pies shaped like ghosts, perfect for Halloween festivities.
Ingredients
- 2 cups fresh blueberries
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 package refrigerated pie crusts
- 1 egg (for egg wash)
- Powdered sugar (for dusting)
Instructions
- Preheat the oven to 425°F (220°C).
- In a saucepan, combine blueberries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens.
- Roll out the pie crusts and cut them into ghost shapes using a cookie cutter.
- Place a spoonful of the blueberry mixture on half of the ghost shapes.
- Cover with the remaining ghost shapes and seal the edges with a fork.
- Brush the tops with egg wash.
- Bake for 15-20 minutes or until golden brown.
- Let cool and dust with powdered sugar before serving.
Notes
- Make sure to seal the edges well to prevent filling from leaking.
- These can be made ahead of time and frozen before baking.
