Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 ripe California avocados
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish


Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  3. Brush the chicken breasts with the olive oil mixture.
  4. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  5. While the chicken is grilling, slice the avocados in half, remove the pit, and scoop out some flesh to create a small bowl.
  6. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
  7. Top each chicken breast with avocado, a squeeze of lime juice, and garnish with fresh cilantro.
  8. Serve immediately and enjoy!
