Description

A flavorful dish featuring tender Greek chicken meatballs served with roasted potatoes, perfect for a family dinner.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup parsley, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups baby potatoes, halved
  • 2 tbsp olive oil
  • 1 lemon, juiced


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. In a separate bowl, toss the halved baby potatoes with olive oil, lemon juice, salt, and pepper.
  5. Place the meatballs and potatoes on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, or until the meatballs are cooked through and the potatoes are golden brown.
  7. Serve warm, garnished with additional parsley if desired.

Notes

  • For extra flavor, marinate the meatballs in lemon juice and herbs for a few hours before baking.
  • Feel free to add other vegetables to the baking sheet, such as bell peppers or zucchini.
  • These meatballs can be served with tzatziki sauce for dipping.
