A flavorful dish featuring tender Greek chicken meatballs served with roasted potatoes, perfect for a family dinner.
Ingredients
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup feta cheese, crumbled
- 1/4 cup parsley, chopped
- 1 egg
- 2 cloves garlic, minced
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups baby potatoes, halved
- 2 tbsp olive oil
- 1 lemon, juiced
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- In a separate bowl, toss the halved baby potatoes with olive oil, lemon juice, salt, and pepper.
- Place the meatballs and potatoes on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, or until the meatballs are cooked through and the potatoes are golden brown.
- Serve warm, garnished with additional parsley if desired.
Notes
- For extra flavor, marinate the meatballs in lemon juice and herbs for a few hours before baking.
- Feel free to add other vegetables to the baking sheet, such as bell peppers or zucchini.
- These meatballs can be served with tzatziki sauce for dipping.
