Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 cup cooked quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, lemon juice, oregano, salt, and pepper to create a marinade.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  5. Let the chicken rest for a few minutes before slicing it.
  6. In a bowl, combine quinoa, cucumber, cherry tomatoes, red onion, feta cheese, and olives.
