Description

Delicious and gooey vegan pecan pie bars that are perfect for dessert lovers.


Ingredients

  • 1 cup of pecans, chopped
  • 1 cup of almond flour
  • 1/2 cup of maple syrup
  • 1/4 cup of coconut oil, melted
  • 1/4 cup of brown sugar
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of cinnamon
  • 1/4 cup of non-dairy milk


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted coconut oil, brown sugar, and salt.
  3. Press the mixture into the bottom of a greased baking dish to form the crust.
  4. In another bowl, mix together maple syrup, non-dairy milk, vanilla extract, and cinnamon.
  5. Add the chopped pecans to the wet mixture and stir well.
  6. Pour the pecan mixture over the crust in the baking dish.
  7. Bake for 25-30 minutes or until the top is golden and bubbly.
  8. Allow to cool before slicing into bars.

Notes

  • Store leftovers in an airtight container in the refrigerator.
  • These bars can be served warm or cold.
  • For added flavor, consider adding a pinch of nutmeg.
