Delicious and gooey vegan pecan pie bars that are perfect for dessert lovers.
Ingredients
- 1 cup of pecans, chopped
- 1 cup of almond flour
- 1/2 cup of maple syrup
- 1/4 cup of coconut oil, melted
- 1/4 cup of brown sugar
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of cinnamon
- 1/4 cup of non-dairy milk
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, melted coconut oil, brown sugar, and salt.
- Press the mixture into the bottom of a greased baking dish to form the crust.
- In another bowl, mix together maple syrup, non-dairy milk, vanilla extract, and cinnamon.
- Add the chopped pecans to the wet mixture and stir well.
- Pour the pecan mixture over the crust in the baking dish.
- Bake for 25-30 minutes or until the top is golden and bubbly.
- Allow to cool before slicing into bars.
Notes
- Store leftovers in an airtight container in the refrigerator.
- These bars can be served warm or cold.
- For added flavor, consider adding a pinch of nutmeg.
