A delicious and creamy gluten-free casserole made with butternut squash and cheese, perfect for a comforting meal.
Ingredients
- 2 cups butternut squash, peeled and cubed
- 1 cup shredded cheddar cheese
- 1 cup milk (or dairy-free alternative)
- 2 eggs
- 1/2 cup gluten-free breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, boil the butternut squash until tender, about 10-15 minutes.
- Drain and mash the squash in a mixing bowl.
- Add the cheddar cheese, milk, eggs, garlic powder, onion powder, salt, and pepper to the mashed squash and mix well.
- Transfer the mixture to a greased baking dish.
- Top with gluten-free breadcrumbs and Parmesan cheese.
- Bake for 25-30 minutes or until the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add some cayenne pepper or red pepper flakes.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
