Description

A delicious and creamy gluten-free casserole made with butternut squash and cheese, perfect for a comforting meal.


Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 1 cup milk (or dairy-free alternative)
  • 2 eggs
  • 1/2 cup gluten-free breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, boil the butternut squash until tender, about 10-15 minutes.
  3. Drain and mash the squash in a mixing bowl.
  4. Add the cheddar cheese, milk, eggs, garlic powder, onion powder, salt, and pepper to the mashed squash and mix well.
  5. Transfer the mixture to a greased baking dish.
  6. Top with gluten-free breadcrumbs and Parmesan cheese.
  7. Bake for 25-30 minutes or until the top is golden brown.
  8. Let it cool for a few minutes before serving.

Notes
