  • 8 oz rice noodles
  • 1 cup shredded carrots

  • 1/4 cup peanuts, crushed
  • 1/4 cup lime juice
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp chili paste


Instructions

  1. Cook the rice noodles according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, combine the cooked noodles, carrots, cucumber, bell pepper, cilantro, and green onions.
