A fun and vibrant recipe for Glow-in-the-Dark Thai Noodle Salad Cups that are perfect for parties and gatherings.
Ingredients
- 8 oz rice noodles
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1 cup red bell pepper, sliced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup green onions, sliced
- 1/4 cup peanuts, crushed
- 1/4 cup lime juice
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 tsp chili paste
Instructions
- Cook the rice noodles according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the cooked noodles, carrots, cucumber, bell pepper, cilantro, and green onions.
- In a separate bowl, whisk together lime juice, soy sauce, sesame oil, honey, and chili paste.
- Pour the dressing over the noodle mixture and toss to combine.
- Serve the salad in cups and top with crushed peanuts.
Notes
- For a glow-in-the-dark effect, consider using tonic water in the dressing.
- Adjust the spice level by adding more or less chili paste.
- Can be made ahead of time; just keep the dressing separate until serving.
