Description
A deliciously moist banana bread infused with the festive flavors of eggnog and topped with a sweet glaze.
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup eggnog
- 1/3 cup melted butter
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon ground nutmeg
- 1/2 cup powdered sugar (for glaze)
- 1 tablespoon milk (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine the mashed bananas, eggnog, melted butter, sugar, egg, and vanilla extract.
- In another bowl, whisk together the baking soda, salt, flour, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, mix powdered sugar and milk until smooth, then drizzle over the cooled bread.
Notes
- For a richer flavor, use dark rum in place of some of the eggnog.
- Store leftovers in an airtight container at room temperature for up to 3 days.
- This bread can be frozen for up to 3 months; wrap tightly in plastic wrap.
