A deliciously moist banana bread infused with the festive flavors of eggnog and topped with a sweet glaze.


Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup eggnog
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the mashed bananas, eggnog, melted butter, sugar, egg, and vanilla extract.
  3. In another bowl, whisk together the baking soda, salt, flour, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, mix powdered sugar and milk until smooth, then drizzle over the cooled bread.

Notes

  • For a richer flavor, use dark rum in place of some of the eggnog.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This bread can be frozen for up to 3 months; wrap tightly in plastic wrap.
