Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar (for royal icing)
  • 1 egg white (for royal icing)
  • 1 tablespoon lemon juice (for royal icing)


Instructions

  1. In a bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  2. In a separate bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add the egg, molasses, and vanilla extract to the butter mixture and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  5. Chill the dough for at least 1 hour.
  6. Preheat the oven to 350°F (175°C).
  7. Roll out the dough on a floured surface to about 1/4 inch thick.
  8. Cut out shapes using cookie cutters and place them on a baking sheet.
  9. Bake for 8-10 minutes or until the edges are firm.
  10. Let the cookies cool completely before decorating.
  11. To make royal icing, beat the egg white and lemon juice until frothy, then gradually add powdered sugar until desired consistency is reached.
  12. Decorate the cooled cookies with royal icing as desired.
