Ingredients
- 3 cups all-purpose flour
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 large egg
- 1/2 cup molasses
- 1 teaspoon vanilla extract
- 2 cups powdered sugar (for royal icing)
- 1 egg white (for royal icing)
- 1 tablespoon lemon juice (for royal icing)
Instructions
- In a bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
- In a separate bowl, cream together the butter and brown sugar until light and fluffy.
- Add the egg, molasses, and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Chill the dough for at least 1 hour.
- Preheat the oven to 350°F (175°C).
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Cut out shapes using cookie cutters and place them on a baking sheet.
- Bake for 8-10 minutes or until the edges are firm.
- Let the cookies cool completely before decorating.
- To make royal icing, beat the egg white and lemon juice until frothy, then gradually add powdered sugar until desired consistency is reached.
- Decorate the cooled cookies with royal icing as desired.
