Description

Gingerbread Cheesecake Cookies are a delightful holiday treat that combines the flavors of gingerbread with a creamy cheesecake filling.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  8. Make a small indentation in the center of each cookie and fill it with the cheesecake mixture.
  9. Bake for 12-15 minutes or until the edges are golden brown.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a spicier flavor, increase the amount of ginger and cinnamon.
  • These cookies can be stored in an airtight container for up to a week.
