Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups chopped vegetables (carrots, celery, etc.)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and cook for another minute.
- Add the vegetable broth and bring to a boil.
- Add chopped vegetables and thyme, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
