Ingredients
- 2 cups cooked fried chicken, shredded
- 1 cup street corn (grilled corn with spices)
- 1/2 cup mayonnaise
- 1/4 cup cotija cheese, crumbled
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 8 small tortillas
- Salt and pepper to taste
Instructions
- In a bowl, combine the shredded fried chicken, street corn, mayonnaise, lime juice, salt, and pepper.
- Mix well until all ingredients are evenly coated.
- Warm the tortillas in a skillet or microwave.
- Spoon the chicken and corn mixture onto each tortilla.
- Top with crumbled cotija cheese and chopped cilantro.
