Florida Orange Juice Pumpkin Bread with Streusel Delights!

Description

A deliciously moist pumpkin bread infused with Florida orange juice, topped with a crunchy streusel and a sweet orange glaze.


Ingredients

  • 1 cup Florida orange juice
  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup streusel topping
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons Florida orange juice (for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the Florida orange juice, pumpkin puree, sugar, brown sugar, and vegetable oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. If using, fold in the chopped nuts.
  7. Pour the batter into the prepared loaf pan and sprinkle the streusel topping on top.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. For the glaze, mix the powdered sugar with Florida orange juice until smooth and drizzle over the cooled bread.

Notes

  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This bread can be frozen for up to 3 months; wrap tightly in plastic wrap and foil.
  • For a richer flavor, add a teaspoon of vanilla extract to the batter.
