Ingredients

  • 4 bell peppers
  • 8 oz cream cheese, softened
  • 1/2 cup fresh herbs (such as parsley, chives, and dill), chopped
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the cream cheese, fresh herbs, Parmesan cheese, garlic, salt, and pepper until well combined.
  4. Stuff each bell pepper with the cream cheese mixture.
  5. Drizzle olive oil over the stuffed peppers.
  6. Place the peppers in a baking dish and cover with foil.
  7. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until golden.
  8. Serve warm and enjoy!
