  • Apple slices – 1 cup

  • Balsamic vinaigrette – 1/4 cup


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the butternut squash, then toss with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  4. In a large bowl, combine mixed greens, roasted butternut squash, apple slices, walnuts, dried cranberries, and feta cheese.
