Delicious cookies that combine the flavors of fall with chocolate chips, perfect for the season.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup white chocolate chips
- 1/2 cup pumpkin puree
- 1 teaspoon pumpkin spice
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
- Add the eggs and vanilla extract, mixing well.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips, white chocolate chips, pumpkin puree, and pumpkin spice.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a more intense pumpkin flavor, add an extra 1/4 cup of pumpkin puree.
- Store cookies in an airtight container for up to a week.
- These cookies can be frozen for up to 3 months.
