Elote Queso is a delicious and creamy Mexican-inspired dish made with corn, cheese, and spices, perfect for any gathering.
Ingredients
- 4 ears of corn, husked
- 1 cup of queso fresco, crumbled
- 1/2 cup of mayonnaise
- 1/4 cup of sour cream
- 1 teaspoon of chili powder
- 1/2 teaspoon of garlic powder
- 1/4 cup of fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Grill the corn on medium heat until charred, about 10-15 minutes.
- In a bowl, mix together the mayonnaise, sour cream, chili powder, garlic powder, lime juice, and salt.
- Once the corn is grilled, remove it from the grill and let it cool slightly.
- Spread the mayonnaise mixture over the corn.
- Sprinkle the crumbled queso fresco and chopped cilantro on top.
- Serve immediately and enjoy!
Notes
- For a spicier version, add more chili powder or diced jalapeños.
- This dish can be served as a side or a dip with tortilla chips.
