Ingredients
- 1 pre-made pie crust
- 1 cup eggnog
- 1/2 cup heavy cream
- 1/4 cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 large egg yolks
- Whipped cream for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Place the pie crust in a pie dish and bake according to package instructions until golden brown.
- In a saucepan, combine eggnog, heavy cream, sugar, cornstarch, vanilla extract, nutmeg, and salt. Whisk until smooth.
- Heat the mixture over medium heat, stirring constantly until it thickens.
- In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot eggnog mixture to the yolks to temper them, then stir the yolk mixture back into the saucepan.
- Continue to cook for another 2-3 minutes, then remove from heat.
- Pour the filling into the baked pie crust and let it cool to room temperature.
- Refrigerate for at least 4 hours or until set.
- Top with whipped cream before serving.
Notes
- For a stronger eggnog flavor, use spiced eggnog.
- Garnish with additional nutmeg or cinnamon for extra flavor.
- This pie can be made a day in advance for convenience.
