Ingredients

  • 1 pre-made pie crust
  • 1 cup eggnog
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • Whipped cream for topping


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the pie crust in a pie dish and bake according to package instructions until golden brown.
  3. In a saucepan, combine eggnog, heavy cream, sugar, cornstarch, vanilla extract, nutmeg, and salt. Whisk until smooth.
  4. Heat the mixture over medium heat, stirring constantly until it thickens.
  5. In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot eggnog mixture to the yolks to temper them, then stir the yolk mixture back into the saucepan.
  6. Continue to cook for another 2-3 minutes, then remove from heat.
  7. Pour the filling into the baked pie crust and let it cool to room temperature.
  8. Refrigerate for at least 4 hours or until set.
  9. Top with whipped cream before serving.
