Description

A simple and delicious white chicken chili recipe that is perfect for family dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 cup chicken broth
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)


Instructions

  1. In a large pot, combine the shredded chicken, white beans, green chilies, chicken broth, and corn.
  2. Add the cumin, garlic powder, onion powder, salt, and pepper. Stir well to combine.
  3. Bring the mixture to a simmer over medium heat, stirring occasionally.
  4. Once simmering, reduce the heat to low and let it cook for about 20 minutes.
  5. Stir in the sour cream and cheese (if using) until melted and well combined.
  6. Serve hot, garnished with additional cheese or cilantro if desired.

Notes

  • This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a spicier version, add jalapeños or cayenne pepper.
  • Serve with tortilla chips or cornbread for a complete meal.
