A simple and delicious white chicken chili recipe that is perfect for family dinners.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 cup chicken broth
- 1 cup corn, frozen or canned
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
Instructions
- In a large pot, combine the shredded chicken, white beans, green chilies, chicken broth, and corn.
- Add the cumin, garlic powder, onion powder, salt, and pepper. Stir well to combine.
- Bring the mixture to a simmer over medium heat, stirring occasionally.
- Once simmering, reduce the heat to low and let it cook for about 20 minutes.
- Stir in the sour cream and cheese (if using) until melted and well combined.
- Serve hot, garnished with additional cheese or cilantro if desired.
Notes
- This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a spicier version, add jalapeños or cayenne pepper.
