Ingredients
- 1 lb maple Dijon sausage
- 2 cups Brussels sprouts, halved
- 2 cups butternut squash, cubed
- 1 red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon thyme
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the Brussels sprouts, butternut squash, and red onion.
- Drizzle with olive oil, salt, pepper, garlic powder, and thyme. Toss to coat.
- Spread the vegetables on a large sheet pan.
- Slice the maple Dijon sausage and place it on the sheet pan with the vegetables.
- Bake for 25-30 minutes, or until the vegetables are tender and the sausage is cooked through.
