Description

A simple and delicious one-pan meal featuring balsamic chicken, orzo, and a variety of vegetables.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in garlic and cook for an additional minute.
  4. Add orzo, chicken broth, balsamic vinegar, and season with salt and pepper.
  5. Bring to a boil, then reduce heat and simmer until orzo is cooked.
  6. Stir in cherry tomatoes and spinach, cooking until spinach is wilted.
  7. Serve warm and enjoy!
