Description
A simple and delicious one-pan meal featuring balsamic chicken, orzo, and a variety of vegetables.
Ingredients
- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until browned.
- Stir in garlic and cook for an additional minute.
- Add orzo, chicken broth, balsamic vinegar, and season with salt and pepper.
- Bring to a boil, then reduce heat and simmer until orzo is cooked.
- Stir in cherry tomatoes and spinach, cooking until spinach is wilted.
- Serve warm and enjoy!
