Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic and cumin, cooking for another minute.
  4. Add the chickpeas and vegetable broth, bringing to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Blend the soup until smooth, then return to the pot.
  7. Stir in coconut milk and season with salt and pepper.
  8. Heat through and serve garnished with fresh parsley.
