Ingredients
- 2 cans chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 cup coconut milk
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and cumin, cooking for another minute.
- Add the chickpeas and vegetable broth, bringing to a boil.
- Reduce heat and simmer for 15 minutes.
- Blend the soup until smooth, then return to the pot.
- Stir in coconut milk and season with salt and pepper.
- Heat through and serve garnished with fresh parsley.
