A warm and comforting soup made with chicken, coconut milk, and Thai spices, perfect for a cozy meal.


Ingredients

  • 1 lb chicken breast, boneless and skinless
  • 1 can (14 oz) coconut milk
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup bell peppers, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp red curry paste
  • 2 tbsp fish sauce
  • 1 tbsp lime juice
  • Fresh cilantro, for garnish


Instructions

  1. Place the chicken breast at the bottom of the crockpot.
  2. Add the coconut milk, chicken broth, carrots, bell peppers, onion, garlic, ginger, red curry paste, and fish sauce.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken and stir back into the soup.
  6. Stir in lime juice before serving.
  7. Garnish with fresh cilantro and serve hot.

Notes

  • Adjust the level of red curry paste to taste for spiciness.
  • Can substitute chicken with tofu for a vegetarian option.
  • Serve with rice or noodles for a heartier meal.
