Ingredients
- 1 lb chicken breast, boneless and skinless
- 1 can (14 oz) coconut milk
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup bell peppers, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp red curry paste
- 2 tbsp fish sauce
- 1 tbsp lime juice
- Fresh cilantro, for garnish
Instructions
- Place the chicken breast at the bottom of the crockpot.
- Add the coconut milk, chicken broth, carrots, bell peppers, onion, garlic, ginger, red curry paste, and fish sauce.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken and stir back into the soup.
- Stir in lime juice before serving.
- Garnish with fresh cilantro and serve hot.
Notes
- Adjust the level of red curry paste to taste for spiciness.
- Can substitute chicken with tofu for a vegetarian option.
- Serve with rice or noodles for a heartier meal.
