A simple and delicious recipe for Crock-Pot Teriyaki Chicken and Rice that makes for an easy dinner option.
Ingredients
- 2 lbs chicken thighs
- 1 cup teriyaki sauce
- 2 cups rice
- 4 cups chicken broth
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- Salt and pepper to taste
Instructions
- Place the chicken thighs in the Crock-Pot.
- In a bowl, mix the teriyaki sauce, garlic, ginger, salt, and pepper.
- Pour the sauce mixture over the chicken.
- Add the rice and chicken broth to the Crock-Pot.
- Stir in the broccoli and bell peppers.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken and mix everything together before serving.
Notes
- For a spicier version, add red pepper flakes.
- Can substitute chicken thighs with chicken breasts.
- Feel free to add other vegetables like carrots or snap peas.
