Ingredients

  • 2 lbs chicken thighs
  • 1 cup teriyaki sauce
  • 2 cups rice
  • 4 cups chicken broth
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Salt and pepper to taste


Instructions

  1. Place the chicken thighs in the Crock-Pot.
  2. In a bowl, mix the teriyaki sauce, garlic, ginger, salt, and pepper.
  3. Pour the sauce mixture over the chicken.
  4. Add the rice and chicken broth to the Crock-Pot.
  5. Stir in the broccoli and bell peppers.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Once cooked, shred the chicken and mix everything together before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Can substitute chicken thighs with chicken breasts.
