Description

A delicious and easy-to-make crock pot roast featuring tender beef, potatoes, and carrots, perfect for a comforting family meal.


Ingredients

  • 3-4 lbs beef chuck roast
  • 4 medium potatoes, peeled and cut into chunks
  • 3-4 carrots, peeled and sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Place the beef chuck roast in the crock pot.
  2. Add the chopped onions, garlic, potatoes, and carrots on top of the roast.
  3. In a separate bowl, mix together the beef broth, Worcestershire sauce, thyme, salt, and pepper.
  4. Pour the broth mixture over the roast and vegetables in the crock pot.
  5. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the meat is tender.
  6. Once cooked, shred the beef with two forks and serve with the vegetables.

Notes

  • For added flavor, sear the roast in a skillet before placing it in the crock pot.
  • Feel free to add other vegetables like celery or parsnips.
  • Leftovers can be stored in the refrigerator for up to 3 days.
