A delicious and easy-to-make crock pot roast featuring tender beef, potatoes, and carrots, perfect for a comforting family meal.
Ingredients
- 3-4 lbs beef chuck roast
- 4 medium potatoes, peeled and cut into chunks
- 3-4 carrots, peeled and sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place the beef chuck roast in the crock pot.
- Add the chopped onions, garlic, potatoes, and carrots on top of the roast.
- In a separate bowl, mix together the beef broth, Worcestershire sauce, thyme, salt, and pepper.
- Pour the broth mixture over the roast and vegetables in the crock pot.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the meat is tender.
- Once cooked, shred the beef with two forks and serve with the vegetables.
Notes
- For added flavor, sear the roast in a skillet before placing it in the crock pot.
- Feel free to add other vegetables like celery or parsnips.
- Leftovers can be stored in the refrigerator for up to 3 days.
