Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and minced garlic, cooking until softened.
- Stir in black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in heavy cream and shredded cheese until melted and combined.
- Season with salt and pepper to taste.
