Ingredients
- 8 oz pasta
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1 cup shredded cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente.
- In a skillet, heat olive oil over medium heat and sauté garlic and mushrooms until tender.
- Add spinach and cook until wilted.
- In a large bowl, combine cooked pasta, sautéed vegetables, heavy cream, and half of the shredded cheese. Season with salt and pepper.
- Transfer the mixture to a baking dish and top with remaining cheese and Parmesan.
- Bake for 25-30 minutes or until the top is golden and bubbly.
- Let it cool for a few minutes before serving.

- For a lighter version, substitute heavy cream with a low-fat alternative.
