Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet.
  3. Cook chicken for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add sliced mushrooms and cook until they are browned.
  6. Add minced garlic and cook for an additional minute.
  7. Pour in chicken broth and bring to a simmer.
  8. Stir in heavy cream and dried thyme, then return the chicken to the skillet.
  9. Simmer for 5-10 minutes until the sauce thickens.
  10. Garnish with fresh parsley before serving.
