Description

A delicious and comforting creamy garlic bread soup topped with homemade croutons.


Ingredients

  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 head of garlic, roasted
  • 1 loaf of crusty bread, cubed
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, combine the vegetable broth and roasted garlic, and bring to a simmer.
  3. Add the heavy cream and season with salt and pepper. Stir well.
  4. In a separate bowl, toss the cubed bread with olive oil, salt, and pepper.
  5. Spread the bread cubes on a baking sheet and bake for 10-15 minutes until golden brown.
  6. Blend the soup until smooth, then serve hot, topped with homemade croutons and fresh parsley.

Notes

  • For a vegan version, substitute heavy cream with coconut cream.
  • Feel free to add more herbs for extra flavor.
  • Store leftover soup in the refrigerator for up to 3 days.
