Description
A delicious and comforting creamy garlic bread soup topped with homemade croutons.
Ingredients
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 head of garlic, roasted
- 1 loaf of crusty bread, cubed
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, combine the vegetable broth and roasted garlic, and bring to a simmer.
- Add the heavy cream and season with salt and pepper. Stir well.
- In a separate bowl, toss the cubed bread with olive oil, salt, and pepper.
- Spread the bread cubes on a baking sheet and bake for 10-15 minutes until golden brown.
- Blend the soup until smooth, then serve hot, topped with homemade croutons and fresh parsley.
Notes
- For a vegan version, substitute heavy cream with coconut cream.
- Feel free to add more herbs for extra flavor.
- Store leftover soup in the refrigerator for up to 3 days.
