Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add chopped onion and minced garlic to the pot, cooking until the onion is translucent.
  3. Stir in the black beans, corn, diced tomatoes, beef broth, chili powder, cumin, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  5. Stir in the heavy cream and heat through for an additional 5 minutes.
  6. Serve hot, garnished with fresh cilantro.

Notes
